Fairmont Hotel Vier Jahreszeiten
★★★★★
Hamburg's Grand Dame, With a Third Michelin Star
Friedrich Haerlin bought a modest eleven-room hotel on the Binnenalster at auction in 1897 and spent the next thirty-five years building it into Hamburg's grandest address, a project his son Fritz and then his widow Agnes carried forward until the family sold the hotel in 1989, ending a ninety-two-year tenure. What survives from that era is substantial: the Art Deco Jahreszeiten Grill, panelled in Caucasian walnut since the 1920s, the fifth-floor viewing balcony added in 1928 under the hotel's green copper roof, and a culinary ambition that reached its peak in 2025, when Restaurant Haerlin was awarded its third Michelin star under chef Christoph Rüffer.
Why It Works
We chose the Vier Jahreszeiten because it is one of the very few hotels anywhere that can put a three-Michelin-star dining room inside a building this steeped in its own city's history and still keep both halves, the grand hotel and the serious kitchen, in balance. The lakefront address on the Binnenalster gives every stay a view few Hamburg hotels can match, and more than a century of continuous operation under two long family tenures has produced a level of institutional polish that a newly built luxury hotel simply cannot fake.
Why This Location
Neuer Jungfernstieg runs directly along the Binnenalster's western shore, putting the hotel within a few minutes' walk of the Jungfernstieg shopping promenade, the Alster boat docks, and the lanes of the Neustadt old town behind it. Hamburg's main train station and the Speicherstadt warehouse district, a UNESCO World Heritage site, are both a short taxi or tram ride away. It is a location that trades the harbourfront bustle of HafenCity for the calmer, more residential register of the inner lake.

A Family's 92 Years, Still Visible
Three generations of the Haerlin family shaped the hotel between 1897 and 1989, and the fabric of that era is still legible rather than restored into abstraction: the walnut-panelled Grill dates to a 1920s renovation by Düsseldorf architect Professor Fahrenkamp, the uniform fifth-floor roofline and viewing balcony were added in 1928, and the hotel's survival through repeated wartime bombing raids is part of the story staff still tell. A 2015 renovation modernised all 156 rooms and the wellness areas without erasing that older architecture, and a 2021 refresh added a dedicated concierge lodge to the reception.
Three Restaurants, Three Different Hamburgs
Restaurant Haerlin, opened in 1919 and now carrying three Michelin stars under Christoph Rüffer, anchors the hotel's culinary reputation, while the Art Deco Jahreszeiten Grill, renovated again in 2023, offers a more classic grill register under the same walnut panelling it has carried since the 1920s. NIKKEI NINE, opened in 2016, turns the hotel toward a Japanese-Peruvian register entirely its own, and Condi, the 1935 Biedermeier-style confectionery, supplies the cakes and coffee that round out a stay built as much around the table as the room.
Before You Book
This is a formal, traditional grand hotel rather than a design-forward boutique, and the register suits a special occasion or a serious culinary trip more naturally than a casual city break. The lakefront Jahreszeiten Terrace operates seasonally, April to October, so a winter stay should plan around the indoor restaurants instead. Restaurant Haerlin, given its three stars, books out well in advance, worth reserving at the same time as the room rather than after arrival.
